For example, if the customer asks: How can you assure me of the quality?
What will you do?
For me, this is a very difficult question because it is not easy to change their impression on low-quality Made-In-China products.

You are probably talking about products that have no certificates or standards met, right?!G+u2A']$r8c5E;t4S
It's really painful to be asked for such question. I agree with upstairs, send them a sample to proof directly. If sample is not convenient, you can list some reference customers for him.
But be sure, this customer must be real customer, not fake customer(I mean your competitors).

for example, One customer ask me: how can you compare your offset press with Roland, Heidlberg, Mitsubishi or Komori?

that is easy. If your products have some certificats or approval just as CE ,CCC etc.no matter what kind of and which authortiy ,just tell them seriously .Then tell them that your products must pass strict inspection before they are sold out ,if they need ,ask them to your factory for a spot study ,probably they will not really come ,if they come ,that is a good news ,because your products worth their attention like this .and at last ,just tell them that your products has beenenjoyed a long good reputation of superior quality ,all the customers offer positive feedback.
all in all ,just tell ,whatever will benefits you ,do not keep scilence ,it is only a question ,not a fact ,right ?
